Saute Onion and Celery until lightly brown.
Peel and dice potato and boil until softened - mash (you can add vegan-friendly butter and almond milk as well if desired)
In a large bowl, combine stuffing cubes, mashed potatoes, onions, celery, broth and seasoning. Mix until well combined.
Add to a large casserole dish and bake - covered a 350 degrees for one hour
