For as long as I can remember, carrots have been my favourite vegetable. As I’ve grown up, I’ve expanded my list of favourite veggies, but carrots have remained. So, these roasted cinnamon spice carrots are bound to be a favourite side dish!
With the blend of cinnamon and other spices (nutmeg & ginger, to be more specific!) these carrots are the ideal addition to a holiday table (like for a vegan Thanksgiving, for example!).
I’ve made variations of similar dishes over the years, because, again, I love carrots. This specific recipe was inspired by these slow cooker cinnamon sugar glazed carrots. That being said, I’m sure they would work well in a slow cooker; perfect if you can’t fit them into your packed oven this Thanksgiving!

Roasted Cinnamon Spice Carrots
- 1 package baby carrots
- 2 tbsp vegan butter melted
- 1/2 cup brown sugar packed
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground ginger
Preheat oven to 350F.
Combine melted butter and brown sugar.
Add spices to butter/sugar mixture
Thoroughly coat carrots
Put covered carrots on a lined baking sheet
Cook for about 30 minutes, or until carrots are thoroughly roasted.
